One of our all-time favourite make-ahead lifesavers is Mini Veggie Bakes. Prep a batch on the weekend, and lunches half sort themselves for days.
Here's the little secret that makes them so easy: you can bake straight into silicone baking cups and moulds. No greasing, no fuss, they pop out beautifully once cooled, and clean-up is a breeze. Meal prep just got a whole lot simpler.
As a guide, about 6 eggs will make 8 to 10 mini bakes with a tablespoon or so of flour. Scale it up or down to suit your crew.
Getting the kids involved from the start makes a real difference.
When they've chosen it and helped make it, they're so much more likely to happily eat what you've packed.
These can be made on the weekend and stored in the fridge in their silicone cup or mould to add to your little one's lunch box during the week.
