    Easy Bacon & Broccoli Mini Egg Bites

    These Bacon, Broccoli & Corn Mini Egg Bites are an easy make-ahead option for busy school mornings. Packed with egg, broccoli, bacon and cheese, they’re delicious warm or cold and are a handy savoury addition to the kids’ lunchbox.

    They’re also freezer friendly, so make a batch ahead and simply grab what you need during the week.

    Prep: 5–10 minutes
    Cook: approximately 18–22 minutes
    Oven: 180°C

    Ingredients

    • 6 eggs
    • 1 cup broccoli, finely chopped
    • 3 rashers bacon or ham, finely diced
    • 1 cup grated tasty or cheddar cheese
    • Corn 

    Method

    1. Heat your oven to 180°C and lightly grease a 12-hole muffin tray, or use silicone muffin cups.
    2. Crack the eggs into a large bowl and whisk until combined.
    3. Add the finely chopped broccoli, diced bacon and grated cheese.
    4. Stir everything together until the ingredients are evenly distributed.
    5. Spoon the mixture between the muffin holes. Give the mixture a quick stir every few spoonfuls so you get plenty of fillings in each one.
    6. Bake for approximately 18–22 minutes, or until the centres are set and the tops are lightly golden.
    7. Allow them to cool in the tray for a few minutes before removing.

    Lunchbox Tip 💛

    These are great for adding a little variety to school lunches and work particularly well in a bento-style lunchboxalongside fresh fruit, crackers and other familiar favourites.

    Make them smaller for younger children or little appetites — bite-sized foods can be much less overwhelming and easier to eat during a busy school break.

    Make Ahead & Freeze

    Once completely cooled, place the egg bites on a tray and freeze until firm. Transfer them to a freezer-safe container or reusable freezer bag.

    Defrost in the fridge overnight when needed. If packing them for school, follow appropriate food-safety practices and keep them chilled with a good-quality ice pack and insulated lunch bag.

    Mix It Up

    One of the best things about mini egg bites is how easy they are to customise. Try swapping the broccoli or bacon for ingredients your children already enjoy, such as:

    • Grated carrot
    • Finely diced capsicum
    • Grated zucchini
    • Ham
    • Baby spinach
    • Chives
    • A little extra cheese
